The time has come when I begin to count down how many days I have left in Bali rather than count how many days it’s been since I arrived. Four weeks have slowly flown by. An oxymoron, but that seems to be the Balinese way.

The only way to keep naughty kitties from swiping a snack — up high and hanging. 🐟😻 Budu Belimbi from Ataúro Island. Nope, it’s not Indonesian, but Timorese. Though with these ingredients — belimbi (belimbing), ai-manas (cabe) and masin (garam) — this pickled condiment can easily be made in Indonesia as well! This edition of our monthly recipe series belongs entirely to Paula Wolfert, who recorded this kecap manis recipe in the 1970s from Javanese immigrants in Queens, New York. Amazingly, it even includes daun sere, daun salam and laos — ingredients she was able to source into the United States at the time.
